Crunchy Satay Salad


Dressing: 1 tbsp grated ginger 1 clove minced garlic 2 tbsp peanut butter (I like crunchy in this recipe) 3 tbsp soy sauce 2 tbsp maple syrup juice of 1 lime 2 tbsp water

Salad: quarter red cabbage (finely sliced) 1 large carrot (grated) 6 radishes (cut into rounds) roughly 150g of spring greens (finely sliced) 2 tbsp sesame seeds 3 stems of spring onions (sliced into rounds) 10 to 15 sugar snap peas (cut in half)

Method: Prepare your vegetables and place them into a large bowl. Mix all of your dressing ingredients. Pour the dressing over the salad and mix using your hands until everything is coated.

Serve alongside one of our tarts or it also works great with noodles! Enjoy! x
