Cranberry & Soy Brussel Sprouts

Recipe serves 4.


500g Brussels Sprouts (halved)

75g hazelnuts (toasted)

seeds of half a pomegranate

1 tbsp rapeseed oil

3 tbsp soy sauce

2 tbsp liquid sweetener (maple syrup, honey or agave)


Place your pan on a high heat and add the oil.

When the oil is hot, add your sprouts flat side down.

Leave for 1 minute.

Add your soy sauce along with a couple spoons of water.

When the water has boiled off, the sprouts should have softened.

If not then simply add a little more water and repeat this step.

Add your sweetener of choice, hazelnuts and pomegranate seeds to the pan and mix thoroughly.

Allow to caramelise for 1 minute and take off the heat.

Serve immediately and enjoy! x
