Blueberry and Lavender Breakfast Smoothie

a perfect use for leftover coconut milk


This recipe was created purely for the purpose of using up leftover coconut milk. It’s one of those food items along with broccoli stems, half tins of chopped tomatoes and wilting spinach that ends up in the back of your fridge until it’s completely gone-off, and we want to help you put a stop to that! So read on if you want a recipe that is not only delicious, but also serves a purpose in reducing your food wastage…


This smoothie is a creamy dream, it has such a delicate and sweet flavour that makes it a joy to drink. The oats make it very satisfying too so it’ll keep you fuelled all day long! The perfect wake me up!



Recipe serves 2.


Ingredients:


100g blueberries

coconut milk leftovers from cheesecake (or 200ml plant-based milk)

half tsp lavender

1 tbsp liquid sweetener (maple syrup, agave etc.)

half tsp vanilla extract

50g oats

extra water or milk (to reach your ideal consistency.)


Simply blend the top 6 ingredients together, in a high speed blender until smooth.

If the mixture is thicker than you prefer, simply top with extra water or milk to reach a perfect consistency!
